Very unlikely you'll hear any of the teams talking, they surely scramble,
and probably do a very good job at it to keep the oppostion and media out
of it.  Best you'll get is stadium security, I would think.

In reference to the coaching staff, the communications from the press
box coaches to the on the field coaches are hard wired. Occasionally you
will notice in a game that the system is out for one of the teams
(someone unplugged or tripped over a wire, I suppose), when that happens
the rules state that the other team must stop using their commo
equipment until the other's is fixed. Occasionally the referees will
announce this to the crowd, just like a penalty announcement, and
sometimes they dont, but a TV crew that is on the ball will notice and
mention it to their audience.
